Last month, I decided to kick start my health in 2016. But that's kind of obvious for a January goal, right? So instead of thinking about it and planning a rigorous gym/food schedule like I usually do (and then I promptly-maybe-on-purpose lose it), I went ahead and bought a couple new cookbooks to get myself excited to create some new healthy dishes. I love both of these books because most of the dishes take less than an hour start-to-finish and the ingredients are not usually expensive or hard to find (low effort, maximum gain!) So far, my favorite meals have been the baked eggplant penne, buffalo chicken salad, and cauliflower fried "rice". ALSO, you get leftovers if you're just cooking for 1 or 2 = easy lunch the next day. Bonus points.
